Today I'll give you cooking recipe.
I'll give you one of my own recipes of this delicious meal - the way I prepare it in small amounts, well enough for a week or less.

What is "LIUTENITSA" / "ЛЮТЕНИЦА"?

It's very cherished Bulgarian Traditional Meal, which preparation is usually Family Ritual - a good tradition from the past, when the whole family members get together and everybody helps. One lovely way for the family to do things together, keeping the spirit of the Family warmth, devotion, union.
The preparation usually takes time during the Fall season - the season of the Harvest. Than, the people get together and start to prepare for the Winter. They make different type of meals - "LIUTENITZA" ("ЛЮТЕНИЦА"), "KYOPOULOU" ("КЬОПУЛУ"), "APETITKA" ("АПЕТИТКА"), "TOMATOES WITH PEPPER" ("ДОМАТИ С ПИПЕР"), KOMPOTS ("КОМПОТИ"), MARMALADES, JAMS and other.
After - they are conserving the meals in jars, and placing them in cool, dry, dark places (usually in the house basement or storage place).
Every family has different variants or their own variant of these receipts. It can be changed, according to the different taste and preferences.
Here, I will share one example, one possible variant.
PRODUCTS
Main traditional ingredients:
Tomatoes
Red Peppers
Eggplants (or without)
Carrots
Garlic
Parsley
Some people add additionally (in different configurations and variants):
Tomato Pure
Green Peppers
Chilli or Pepperoni
Onion
Cumin
My variant (for 1 week):
Tomatoes - 7 middle size to big tomatoes
Red Peppers - 4
Eggplants - 4 average size
Carrots - 1 big
Onion - 1/2
Garlic - 3 small pieces
Parsley - one water glass of leaves
PREPARATION
Bake the Eggplant...
...and the Peppers.
Put the ready products in pot or glass bowl and close them there, to steam well in their own temperature. Keep them there, until you finish baking all products.
After clean them from the burned skin one by one over the kitchen sink, under slightly running drops of cold water. (The cold water will help the hot skin to separated from the vegetable without damage.)
Use more water for the Eggplants to remove the bitter taste from them and leave a side to drain.
Clean the Pepper carefully, but not under too much water, because you don't want to lose the delicious natural juice.
Clean the Eggplants from the seeds and cut in pieces.
Clean the Peppers from the seeds, too. Cut in pieces.
Prepare the rest of the products:
Shred the Carrot.
Shred the Onion.
Grind the Garlic (with salt).
Shred the Tomatoes.
Put them into a pot and set a fire. At the beginning it can be more powerful to help the water to evaporate faster (but don't burn them. You will decide what degree, according to your own stove.)
The more the water evaporates, the more the tomatoes will splashing hot drops in all directions. That's why, cover the pot with anti-splashing cover. (This can save you from a lot of problems lately.)
The more thicker the Tomatoes become, the more you must mix them and to check from time to time the bottom for water residue.
Simply, make trace on the bottom and if it covers fast back, it means - it's not ready.

Now it's time to add the rest of the products:
Mix them well and leave on normal fire. Cover with that special cover.
When they are ready - add 1 spoon of oil and mix.
Add Salt (on taste), Black Pepper, Cumin (optionally), Rigano (optionally), one spoon of Sugar (to kill the sour taste of the Tomatoes), Parsley.
Strain.
Cook 5 minutes more.
Move in a pan.

Now it's ready to put in preheated (220C) the oven to roast (200C - 180C).

Check from time to time...
...and mix it very often.
It has to become thicker.
Mix very well from all sides.
Now, it's READY!
