Today I want to present to your attention my version of this very delicious Bulgarian traditional dish - "KIOPOOLU"/"КЬОПУЛУ".
This dish is very popular and suitable for all seasons.
PRODUCTS AND PREPARATION
- 3-4 roasted Eggplants
- 1 Tomato
- 2-3 cloves Garlic
- small Onion
- Salt
- Black pepper
Peel the Eggplant, clean it, wash it thoroughly with water and leave it to drain from the juice, which has a very bitter taste. After some time, cut it on pieces.
Peel the Tomato and cut it on pieces, too.
Clean the garlic.

Put everything in a bowl. Add Black pepper, Salt on taste and parsley...
...and blend.
Optionally, you can add 1 piece red roasted peppers and even a spicy roasted pepper.
Place in a bowl, add little sunflower oil and vinegar on taste.
Serve with well cooled traditional Bulgarian Rakia.
